Apple Pie Parfait Recipe

My family took a trip to a local apple orchard last week and had fun picking apples. We came home with big smiles and 15 pounds of golden delicious apples. We have lots of plans for using them like making dehydrated apple slices and a few jars of apple sauce. First though, we decided to cut some up and use them to make a delicious Apple Pie Parfait for an afternoon snack. My kids loved helping me put them together and eating them.

HOW TO MAKE AN APPLE PIE PARFAIT


Ingredients:

  • Yoplait® Greek Apple Pie Yogurt
  • granola
  • caramel sauce
  • apple pie filling
Apple Pie Filling Ingredients (you can adjust these measurements to your liking):
  • 6 cups of apples, peeled and cut into small pieces
  • 1 tbsp lemon juice
  • 1 1/2 tbsp butter
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 cup sugar
  • 1/8 cup brown sugar
Directions:

1. Start by making your apple pie filling. Peel your apples and cut them into small pieces. We used about 6 cups of apples. This handy apple peeler corer makes this step a breeze. Toss the apple pieces with a tbsp of lemon juice.

2. Melt 1 1/2 tbsp of butter in a pan on medium heat and add your apples. Add the cinnamon and nutmeg and stir to coat all of the apples. Let the apples cook and soften for about 10 minutes. Then add the sugar and brown sugar into the mixture. Let the apples continue to cook and soften until the liquid has completely cooked out of the pan.

3. Get out your Yoplait® Greek Apple Pie Yogurt, open it and give it a good stir. Add half of the yogurt into the bottom of your container. Then add a big spoonful of your apple pie filling on top of the yogurt followed by a handful of granola.

4. Add the other half of your yogurt on top of the granola and another small spoonful of apple pie filling on the top. Finish off your parfait with a drizzle of caramel on top of the apple pie filling. 

I served ours with the apples right off the stove so it would be like biting into a warm apple pie, but you could also make the apple pie filling in advance and serve it cold. The apples add a perfect amount of sweetness and crunch to the parfait and makes it a perfect fall snack!
